Squash Recipe Anyone?


Wanted: an easy, kid-friendly, squash recipe. Bonus if it involves cheese.


Seriously, who knew 3 little seeds could produce so much squash?




Now, if the rest of these tomatoes would hurry up and turn red, I know exactly what to do with them!

I don't have a recipe, but try a vegetarian lasagna.

Okay, this does not involve cheese, but my kids do like it....

slice the squash, onion, garlic, and salt in a pan with olive oil. Cook until everything is tender (not mushy) and then mix in some bacon crumbles... yummy! I'm making it tonight, in fact. It takes about 5 minutes to make an entire pan full.

Here is a recipe for squash pancakes. You can use any vegetable that can be shredded, like squash, potato, eggplant, or carrots. My mom used to make it for us and now I make it for my son. You can eat the pancakes instead of bread with a soup or a stew. Shred 1 lb of squash, add one egg, some salt and couple spoons of flour. Fry as you would silver dollar pancakes. You could probably add some cheese to the batter and make cheesy pancakes.

I have 2 red tomamtos and waiting for more - I love summer tomatos.

I take squash and cucumber raw and chop it into tiny cubes and then mix it together with a little ranch and serve like a salad - Daniel loves it!
